And, here is the recipe for my mom's dumpling (水餃 tsuí-kiáu). This is a great recipe for having your young reader help you with the filling-the-dumplings part of the recipe.

Servings: about 30 dumplings

Ingredients:

1/2 lb ground pork

2 tablespoon minced scallions

1 tablespoon finely minced (or pureed) ginger

1 bunch minced chives

3 1/2 tablespoons rice cooking wine

1 teaspoon sesame oil

wonton or gyoza wrappers

1/2 teaspoon salt

1/2 teaspoon pepper

4 teaspoon soy sauce, tamari, or coconut aminos

regular flour or cornstarch

Making the filling:

* Marinate the ground pork with the rice cooking wine, soy sauce/tamari/coconut aminos, salt, sesame oil and pepper. Put it aside.

* Add the ginger, scallion, and chives to the marinated ground pork. Stir and mix well. The filling is ready.

Wrapping the dumpling:

* Add water to the flour or cornstarch to make a thin slurry. It shouldn't be a paste.

* Lightly wet the edge of the wrapper with the slurry.

* Put about a tablespoon of filling in the middle of wrapper.

* Fold the edges together and pleat. I like to also wet the pleating area to help the pleats stick together.

* Pinch the pleats so the dumplings don't come apart when they boil.

Boiling the dumplings:

* Gently and carefully put the dumplings into the pot of boiling water.

* Once the water is boiling again, add a half glass of cold water to it, put the cover on and bring it to boil again using high heat.

* Repeat adding the cold water and bringing back to a boil two more times.

* The dumplings are cooked and ready to be taken out.

* Cool slightly.

* Dip each dumpling into soy sauce, tamari, or coconut aminos and eat.

As you can see, my method is way simpler! Whether traditional or simplified, I hope you enjoy these dumplings as much as I do!

Hi, Friend, Happy Almost Lunar New Year and Spring Festival! The dragon will leave to make room for the snake on January 29, 2025.
